Authentic Chicken Fajitas

Begin making the marinade by adding lime juice and the rinds from the lime to a mixing bowl or zip lock bag.

Next, add fresh garlic, cumin, oregano, smoked paprika, cinnamon, chili powder, olive oil, and salt to the lime juice.

Mix all of the marinade ingredients together really well, until it is like a sauce with no powdered spices left.

For the chicken breasts, I recommend slicing them in half if they're quite thick, or pounding them down so that they're thinner to help them cook properly.

Add the thinned chicken to the prepared marinade. A zip lock bag is easier for ensuring all of the chicken is coated.

Mix the marinade and chicken well and allow it to marinate for at least 30 minutes. Overnight is fine too.

When you're ready to cook, place the chicken on a piping hot skillet and cook for 4-5 minutes on each side.

The chicken will be brown and slightly charred when it's ready. Place it on a plate to rest for 5 minutes before slicing.

While the chicken is resting, add sliced bell peppers and onions to the hot pan and cook for a few minutes until the soften and char slightly.

Serve these chicken fajitas on wheat or corn tortillas with a squeeze of fresh lime and a margarita on the side!
