Paleo Gumbo Recipe

Begin by making the roux by melting ghee in a pot and adding cassava flour.

Within 10 minutes the roux will start to turn darker. It's much quicker than roux with regular flour! This thickens the gumbo.

Add spices and cook them for a couple of minutes, followed by the onions, green bell peppers, and celery (Cajun holy trinity).

Add in sausage and chicken thighs followed by chicken stock. I included my own sausage mix recipe in the recipe card.

Give the sausage gumbo a big stir before allowing it to simmer for 40 minutes.

After the gumbo has simmered, add in raw shrimp and cook for 5 minutes until they turn pink.

Serve the gumbo as it is or over rice or cauliflower rice to keep it whole30 friendly!
