Keto Coconut Clusters

Begin by toasting the coconut. I used raw organic coconut chips that were unsweetened. They get really crunchy - so good!

Next, in a bain-marie (bowl over a pot of boiling water) melt the chocolate. Break up the chocolate so that it melt quickly, and stir it often.

Keep stirring the chocolate. I recommend using a sugar-free keto-friendly chocolate, or 70-90% dark chocolate. I used 85%.

While the chocolate is melting, you can prepare your clusters by adding large pinches of toasted coconut to a silicone baking sheet or greaseproof paper. I made 12 clusters.

Spoon about 1 tablespoon of melted chocolate over each cluster and then sprinkle them with more coconut chips and a pinch of salt.

Chill them for about an hour until they are set. These no-bake keto coconut clusters are perfect as a snack or instead of cookies for dessert!
