Next, in a bain-marie (bowl over a pot of boiling water) melt the chocolate. Break up the chocolate so that it melt quickly, and stir it often.
While the chocolate is melting, you can prepare your clusters by adding large pinches of toasted coconut to a silicone baking sheet or greaseproof paper. I made 12 clusters.
Spoon about 1 tablespoon of melted chocolate over each cluster and then sprinkle them with more coconut chips and a pinch of salt.
Chill them for about an hour until they are set. These no-bake keto coconut clusters are perfect as a snack or instead of cookies for dessert!
