Squid Game Dalgona Candy (Keto & Paleo)

Add Stevia and erythritol blend to the bowl of a metal ladle over the burner of a gas stove (holding the handle) and then turn the burner on.

Add butter and vanilla to the ladle. I found that the butter kept the mixture from burning and adds flavour along with the vanilla.

With a chopstick or the end of a wooden spoon begin mixing the ingredients over the heat until they dissolve. Be careful - this will get VERY hot!

Erythritol and stevia sometimes take longer to dissolve than sugar. Just keep stirring and it will all come together!

Once combined, switch off the heat and add the baking soda and honey. I added 1/4 tsp of honey (1/8 per candy) to retain the bubbles from the baking soda and create the honeycomb texture.

Stir together a little and then switch the heat back on for the baking soda to work it's magic!

Continue stirring until the mixture becomes foamy, about 10-15 seconds. Quickly turn off the heat to avoid burning.

Carefully and quickly pour the hot dalgona candy onto a silicone baking sheet or baking paper on a flat surface, and allow the squid game candy to cool.

If you want to, you can take a cookie cutter and press a shape into the dalgona candy. I found that it  was a little crunchy and not as smooth as the sugar version looks.
