Add oil.
1
Begin by adding olive oil to an oven-safe skillet oven medium-high heat. I used a cast iron skillet for a lovely sear.
Pat the chicken.
2
Pat the chicken breasts with a paper towel. This will help with searing and seasoning.
Season.
3
Adding seasoning is key to great tasting chicken! I added salt, black pepper, onion powder, and a couple of pinches of chili powder.
Sear.
4
Place the chicken in the hot skillet and sear it for 4 minutes. You should be able to squeeze 4-6 chicken breasts in.
Flip.
5
Using tongs, flip the chicken over onto the other side.
Season.
6
Season the other side of the chicken with all of the remaining seasoning.
Add garlic.
7
Sprinkle freshly chopped or minced garlic over the chicken in the skillet.
Add rosemary.
8
Pop in two or three fresh sprigs of rosemary.
Pour wine & honey.
9
Mix together white wine and honey and pour it into the pan. I used a dry chardonnay.
Add cranberries.
10
Scatter cranberries over everything in the pan. You can use fresh or frozen. I've even used dry cranberries when fresh weren't in season but I prefer fresh or frozen.
Bake!
11
Bake the chicken until it is heated all the way through, taking care not to over bake it. Check the thickest chicken breast with a thermometer. The temperature should ready 165°F.
Serve.
