Easy Vegetable Stew

Firstly, turn on the slow cooker and add oil. Dice your vegetables and then when the oil is hot sauté the onions in the slow cooker.

Add in the spices and garlic, and sauté until they become fragrant - about 2 minutes. The spices I used were nutmeg, cinnamon and chili powder - warm and cosy!

Next, add in the diced veggies. I used seasonal vegetables in fall when I made this - pumpkin, butternut squash and sweet potato. Substitute pumpkin for another squash like acorn if it's unavailable.

I added a can of diced tomatoes for that lovely, hearty red colour stews often take on. There's nothing like a rich, tomatoey broth!

Instead of beef, we're adding jackfruit to this "beef" stew. It has an incredible "meaty" texture but is 100% plant-based.

Lastly, pour in some vegetable stock, just enough so the slow cooker is full. Slow cook on low for about 5 hours.

Serve on it's own or over rice or mashed potatoes. I sprinkled my Vegan Jackfruit Stew with Air Fryer Pumpkin Seeds - delicious!
