Ingredients

  • 1 large cucumber
  • 1 lime juiced
  • 1/4 cup fresh mint
  • 3 tablespoons powdered sweetener or sweetener of choice I used powdered erythritol
  • Splash of soda water a.k.a. club soda
  • lime wedges to garnish

Instructions

  • Chop the cucumber into 1 inch pieces.
    1 large cucumber
  • Place all of the ingredients except the soda water into a blender.
    1 lime, 1/4 cup fresh mint, 3 tablespoons powdered sweetener or sweetener of choice
  • Blend until everything is pureed and the sugar or sweetener has dissolved.
  • Strain it through a fine mesh strainer into a jug or bowl, pressing it lightly with a spatula as you go.
  • Taste and adjust the sweetness.
  • Fill 2 glasses with ice, pour the cucumber cooler over the ice and top up the drinks with soda water.

  • Garnish with lime wedges if desired, and enjoy!

Notes

  • Cucumber choice: Using English cucumbers is best as they are less bitter and have fewer seeds, but regular cucumbers work well too; just make sure to peel them first.
