- 1 large cucumber
- 1 lime juiced
- 1/4 cup fresh mint
- 3 tablespoons powdered sweetener or sweetener of choice I used powdered erythritol
- Splash of soda water a.k.a. club soda
- lime wedges to garnish
Chop the cucumber into 1 inch pieces.

Place all of the ingredients except the soda water into a blender.
1 lime, 1/4 cup fresh mint, 3 tablespoons powdered sweetener or sweetener of choice
Blend until everything is pureed and the sugar or sweetener has dissolved.
Strain it through a fine mesh strainer into a jug or bowl, pressing it lightly with a spatula as you go.
Taste and adjust the sweetness.
Fill 2 glasses with ice, pour the cucumber cooler over the ice and top up the drinks with soda water.
