Frankenstein Avocado Recipe

A fun and very healthy Halloween treat, these Frankenstein Avocados will become an annual favorite! Follow my step-by-step instructions and you’ll be whipping these fun snacks up in about 5 minutes, tops.

Ingredients

  • 3 avocados
  • 2 slices of cheese regular or dairy-free
  • 12 blueberries

Instructions

  • Slice the avocado in half and remove the seed.

  • Using a large spoon, scoop out the flesh keeping it intact. Now you have a face!

  • Using some kitchen scissors, cut around the avocado skin about 1/3 of the way down, in a zigzag pattern. Smaller and larger zigzags are great – keep the pattern random!

  • Place the hair on Frank.
  • Use a 20mm diameter (3/4 of an inch) circle fondant cutter/cookie cutter to cut out the eyes from a slice of cheese. You could carefully use a knife for this as well.

  • Roll the end of the blueberry in some of the extra avocado that was stuck to the spoon that removed the green flesh from the avocado skin to make it stick to the cheese.

  • Line a slightly larger circle fondant cutter/cookie cutter up with the top of the empty circle in the cheese slice and cut out a moon shape. My second cutter was 27mm in diameter (just over 1 inch). Slice off the pointy ends (these can be used as the electrodes in Frankenstein’s neck later).

  • Cut the moon in half with a knife and carefully cut out a stitching pattern. If it’s too fiddley, a regular smile of cheese will be great too!

  • Add a couple of discarded bits of cheese on either side of Frank’s neck for the electrodes.

Notes

Storage Instructions:

I made a few extra and stored them in an airtight container. They turned a little brown but were still edible for the next 2 days. Squeeze a little lemon juice over them and store the avocados with their seeds in the container to help keep them fresher for longer.

Tips:

  • Use fresh avocados: You want the to be ripe but not over-ripe and turning brown. I used the avocados the same day I bought them.
  • Check the hair: Check which side of hair fits before cutting the skin.
  • Try different cheese: Any slices of cheese will work!
  • Make it vegan by using vegan cheese.
