Notes

    1. Don't skip the resting time: It might be tempting to cut into it right away, but giving it a few minutes helps everything set and makes serving easier.
    2. Customize the spice level: If you like things with a bit more kick, don't hesitate to add some red pepper flakes, diced jalapeños, or hot sauce into this keto casserole recipe.
    3. Check for seasoning: After adding the beef broth and before combining everything, give it a taste and adjust the salt and pepper if needed.
    4. Low-carb topping options: If you're missing the fried onions on top of traditional casseroles, try a sprinkle of almond flour mixed with grated parmesan cheese and a little bit of olive oil for the last 5 minutes of baking for a crispy finish.
    5. Make it ahead: You can assemble this casserole a day ahead and keep it in the fridge. Just add a few minutes to the baking time since you'll be starting from cold.

Storage & Reheating Instructions

    • Cool & Airtight: Make sure the casserole is at room temperature and store it in an airtight container.
    • Fridge or freeze: In the fridge, your casserole will stay good for 3-4 days. If you're thinking longer term, you can freeze it for up to 2 months. Just make sure it's wrapped well or in a freezer-safe container.
    • Reheating: When you're ready to enjoy it again, you can reheat slices in the microwave, or for a crispier top, pop it back into the oven at 350°F until it's heated through.
    • Freeze before baking: You can assemble the casserole, cover it tightly, and freeze before baking. When you're ready to cook it, let it thaw in the fridge overnight, then bake as directed, adding a few extra minutes if needed.
