Jello
- 12 g/1 sachet unflavored gelatin powder
- 1/4 4 tablespoons cup lemon juice
- 1/2 cup 50g sweetener of your choice (I used a stevia and erythritol blend)
- 1 cup 240ml boiled hot water
- 1 240ml cup cool water
- 1/2 teaspoon food coloring
Whipped Cream (See Note 3)
- 1 + 1/3 cups 300ml heavy whipping cream (double cream) or coconut cream
- 1/2 cup 50g powdered erythritol
- 1 tsp vanilla extract
Keto Jello
Boil half of the water and add it to a measuring jug for easy pouring later.
Whisk the gelatin, sweetener, lemon juice, cool water, and coloring into the jug, and continue whisking until everything is dissolved.
Prepare the 4 small bowls or cups that you want to set and serve the sugar-free jello in. I opted to make jello cups with 4 stemless wine glasses. I tilted them in a bread tin so that they would have a fun diagonal slant, but this is entirely optional.
Pour the homemade jello mixture into your prepared dishes and allow it to come to room temperature if it hasn't already.
Place the jello cups in the fridge and chill them until they are set, about 3 hours.
Whipped Cream
Add the cream, sweetener, and vanilla to a large mixing bowl or stand mixer.
Whip the ingredients with an electric mixer or the whisk attachment on your stand mixture until stiff peaks form.
Once the jello has set, top it with whipped cream and a few blueberries if desired.
- Change colors: Any color of food coloring will work for this sugar free jello recipe! Try a tiny drop of red to make pink lemonade jello.
- Different flavors:
- Lime jello: Instead of adding freshly squeezed lemon juice, try lime juice plus a drop of blue coloring with 1/2 teaspoon of yellow to make green.
- Orange jello: Add 1/4-1/2 tsp of orange extract and a drop of red food coloring to the 1/2 teaspoon of yellow to make it orange.
- Strawberry jello: Add 1/4-1/2 tsp of strawberry extract and 1/2 a teaspoon of red food coloring. If you're a fan of fresh strawberries, add a few chopped strawberries to the mixture and let it set. Add whipped cream and blueberries to make this sugar free strawberry jello patriotic-themed.
- Lower calorie: Skip the cream or use light cool whip or squirty cream to reduce the calories. To make it dairy-free, top it with my Coconut Whipped Cream Recipe (so tasty!).
- Make it paleo: Top with coconut whipped cream to make this treat dairy-free and paleo-friendly.
- Keto jello shots: Replace the cup of cold water with vodka and pour it into shot containers with lids. Make sure that the gelatin mixture is cool before adding the vodka - you don't want to burn off any alcohol!
- Store any leftover sugar free jello desserts in the fridge for up to a week.
