Ingredients

  • 1 banana divided
  • 1 cup Greek yogurt
  • cup pumpkin puree
  • ½ teaspoon pumpkin pie spice or cinnamon
  • 1 tablespoon pecans crushed
  • 1 tablespoon pumpkin seeds
  • 1 teaspoon maple syrup or honey, optional

Instructions

  • In a bowl with a fork, begin by mashing ¾ of the banana, and then mix it well with the Greek yogurt, pumpkin puree, and pumpkin spice.
    1 cup Greek yogurt, ⅓ cup pumpkin puree, 1 banana, ½ teaspoon pumpkin pie spice
  • Slice the remaining banana and place it on top.
  • Using your hands (or a chopping board and knife), crush the pecans and place them on top followed by the pumpkin seeds.

  • Drizzle with maple syrup or honey if desired. add more to taste if needed, and enjoy!

Notes

  • Plain Greek yogurt gives the thickest texture.
  • A very ripe banana means less added sweetener.
  • Crush pecans right before serving so they stay crunchy.
  • Taste before drizzling any syrup or honey, the pumpkin and banana are often sweet enough alone.
