- 1.5 cups raw almonds (around 200g)
- 1 tablespoons refined coconut oil or olive oil or butter
- 2 tablespoons honey or maple syrup or sugar-free sweetener of choice (see note 1)
- 1/2 teaspoon vanilla extract
- 1 teaspoon ground cinnamon divided
- 1/4 teaspoon salt to taste
Preheat the air fryer to 200°C/390°F.
In a small bowl, melt the coconut oil in the microwave for 30 seconds and then mix in the honey and vanilla extract.
In a medium bowl, mix the almonds with the coconut oil and honey mixture until completely coated.
Add the almonds to the air fryer basket in a single layer and air fry for 8 minutes.
While the almonds are roasting, mix 1/2 teaspoon of cinnamon and 1/4 teaspoon of salt together.
After the 8 minutes are up, sprinkle the almonds with the cinnamon and salt mixture, give them a stir, and cook for a further 5-7 minutes, or until they are roasted.
Line a baking tray with parchment paper, and dust it with 1/4 teaspoon of cinnamon.
Pour the air fried cinnamon almonds onto the parchment paper, and spread them in a single layer.
Dust with the remaining 1/4 teaspoon of cinnamon and allow them to cool completely.
Add extra salt if needed, and enjoy!
