- 1 package of frozen or refrigerated chocolate chip cookie dough or follow the recipe below
Chocolate Chip Cookie Dough
- 282 g 2 1/4 cups all-purpose gluten-free flour (or regular all-purpose flour)
- 1/2 teaspoon xanthan gum* see note 1
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons greek yogurt or a dairy-free alternative
- 180 g 3/4 cups/12 tablespoons refined coconut oil, room temperature (or butter)
- 170 g 1 cup packed brown sugar (or brown sugar substitute)
- 100 g 1/2 cup white sugar (or white sugar substitute, I used xylitol)
- 1 1/2 teaspoons pure vanilla extract
- 2 egg yolks
- 340 g 1-1.5 cups semi-sweet chocolate chips
Make the chocolate chip cookie dough (optional)
Begin by creaming the sugar and coconut oil together in a large bowl. I used a stand mixer at medium speed. The coconut oil should NOT be melted. Room temperature is ideal.
Next mix in the greek yogurt, vanilla extract, and egg yolks.
In a separate bowl, mix the flour, salt, baking soda, and xanthan gum (if using) together.
Add the dry ingredients to the wet ingredients and mix until it's fully incorporated. I added 1 spoonful of flour to the wet mixture in the stand mixer at a time.
Fold in the chocolate chips.
Cover the container with a lid or plastic wrap and refrigerate for 30 minutes-1 hour.
Form the cookie dough into 1.5-inch balls using a regular cookie scoop or rolling it between your hands, then flatten them a little.
Air fry them or place them back in the fridge or freeze them in a freezer bag for later.

You'll need some kind of baking sheet that fits in your air fryer basket. I use a springform cake pan that fits just perfectly. Place a piece of parchment paper over the circle and close the springform over it. Cut off any excess paper.
Place the tray in the basket of the air fryer and preheat the air fryer to 160°C/320°F.
When the air fryer is hot, place 1-3 cookie dough balls onto the parchment paper.
Air fry cookie dough for 8-10 minutes.
Allow it to cool before eating. I remove the springform and lift the parchment paper onto a wire rack.
Repeat for as many cookies as desired or save the rest of the cookie dough for later.

Serve this delicious treat with a scoop of ice cream!
- Chilled too long: If the cookie dough is too hard after leaving it in the fridge, let it sit at room temperature for 10-15 minutes (or longer) to soften up.
- Cookie type: From chocolate chip cookies and peanut butter cookies to sugar cookies, this method works for all of your favorite cookies.
- Size of your air fryer: The cooking time can be either longer or shorter depending on the size of your air fryer. I recommend checking the cookies at the shortest time given in the recipe card, and adding 2-3 minutes as needed.
