Frozen Yogurt Bites (with a Raspberry Surprise)

Peanut butter frozen yogurt bites with a whole raspberry hidden in the middle: the tart little surprise is what makes the whole batch disappear. Ten minutes of actual work, then the freezer does the rest. Make a batch on Sunday and there’s a cold, chocolate-dipped snack waiting all week for after school, after dinner, or after a very long day.

Key Ingredients & Substitutions

  • Greek yogurt: Full-fat, thick, plain Greek yogurt (Fage or Chobani both work). Low-fat or runny yogurt makes flat, icy bites. If yours looks loose, strain it through a paper-towel-lined strainer for 20 minutes first.
  • Peanut butter: Smooth, so the mixture stays scoopable. Swap for tahini if you’re avoiding nuts; the flavor shifts, but everything else stays the same.
  • Honey: Sweetens and softens the freeze slightly. Maple syrup works one for one.
  • Raspberries: One whole raspberry per bite. Fresh or frozen both work, and frozen is cheaper. No good substitute at this size, though a strawberry half comes close.
  • Dark chocolate and coconut oil: The coconut oil thins the chocolate so it sets in a thin, snappy shell instead of a thick slab. Milk chocolate is fine if that’s what your kids prefer.
  • Freeze-dried raspberries (optional): Crushed over the wet chocolate for a bit of color and extra tang. Skip without consequence.

How to Make It

  1. Mix the base. Stir the plain yogurt, peanut butter, and honey together until completely smooth, with no streaks of peanut butter left.
  2. Build the bites. Space the raspberries evenly across a parchment paper-lined tray (or drop one into each cup of a silicone mini muffin tray). Scoop a heaping tablespoon of the yogurt mixture over each raspberry, covering it completely so it’s sealed inside.
  3. Freeze until solid. Two hours minimum. The raspberry center freezes last, so don’t cut this short.
  4. Melt the coating. Melt the chocolate and coconut oil together in short bursts in the microwave, stirring between each, until just melted and glossy. It should be warm, not hot.
  5. Dip. Working with a few bites at a time (leave the rest in the freezer), drop each one into the chocolate, lift out with a fork, let the excess drip off, and set on a lined tray. Sprinkle with crushed freeze-dried raspberries while the chocolate is still wet.
  6. Set. Back in the freezer for 5 to 10 minutes until the shells are firm.

Tips for Getting It Right

Almost every problem with these comes from dipping too early: half-frozen bites slide off the fork, melt into the chocolate, and turn the whole bowl streaky.

  • Freeze the full 2 hours before dipping, no shortcuts.
  • Dip in small batches. Bites waiting on the counter soften fast.
  • Keep the melted chocolate warm, not hot. Hot chocolate melts the yogurt on contact.
  • If your first bite slides apart on the fork, put the tray back in the freezer for 30 minutes and try again.
  • Pat fresh raspberries dry before sealing them in. Wet berries make icy pockets.

Variations

  • Strawberry surprise: A strawberry half instead of a raspberry. Chop and pat dry first.
  • PB&J swirl: Ripple a teaspoon of raspberry jam through the yogurt mixture before scooping.
  • White chocolate shell: White chocolate with crushed freeze-dried raspberries pressed on top.
  • No-dip version: Skip the chocolate entirely and roll the frozen mounds in crushed granola. Faster, and one less step.

Storage

  • Freezer: Once the shells are set, move the bites to an airtight container with baking paper between layers. They keep for 1 month; after that the chocolate can develop a white bloom (safe, just less pretty).
  • Serving: Straight from the freezer they’re very firm, especially the raspberry center. Let them sit on the counter for 5 minutes before eating.
  • Fridge: Not an option. They soften to a mess within the hour, so these live in the freezer only.

Can I use frozen raspberries? 

Yes, straight from the bag. Don’t thaw them first or they’ll leak juice into the yogurt.

Why is my yogurt mixture too runny to scoop?

The yogurt wasn’t thick enough. Strain it through a paper-towel-lined strainer for 20 minutes, or start with a thicker, full-fat Greek yogurt next time.

Why did the chocolate shell crack?

A little cracking when you bite in is normal (and satisfying). Big cracks straight after dipping usually mean the coating went on too thick: let more chocolate drip off before setting the bite down.

Are these OK for my baby?

Not under one, because of the honey. For toddlers, cut them in half and let them soften a few minutes first, since the frozen raspberry center is firm.

Do I have to dip them in chocolate?

No. They’re good plain, or sprinkled with crushed granola, which also skips the melting step entirely.
