Lemon garlic shrimp and asparagus is the dinner I reach for when the day has run late, and something has to be on the table fast. Bright asparagus, garlicky olive oil, plump shrimp, one pan, one lemon squeeze at the end. Thirteen minutes start to finish. It holds up for a rushed weeknight, a quick proper lunch, or a low-key date night.

Key ingredients & substitutions
- Olive oil. For sautéing and finishing flavor. Avocado oil works if you want a higher smoke point.
- Garlic. Two cloves, minced. Fresh only here. Jarred garlic goes bitter fast, and this dish has nowhere to hide it.
- Asparagus. Trim the woody ends and cut into 1-inch pieces so it cooks evenly with the shrimp. Green beans or tenderstem broccoli are fine swaps.
- Shrimp. Raw, peeled, deveined. Frozen is fine; thaw in a bowl of cold water while you prep the asparagus. Prawns are the same thing.
- Lemon. Half a fresh lemon, squeezed at the end. Bottled juice tastes flat. Lime works in a pinch.
- Salt and pepper. Half a teaspoon of salt, a pinch of pepper. Reduce the salt slightly if your shrimp are pre-brined.
How to make shrimp and asparagus




- Heat the pan. Warm the olive oil in a large skillet over medium heat until it shimmers.
- Sauté the garlic. Add the minced garlic and cook for 1 minute, stirring, until fragrant but not colored. Burnt garlic will run the whole dish.
- Cook the asparagus. Add the asparagus and sauté for 4 to 5 minutes, stirring occasionally, until bright green and just tender when you bite one.

- Finish with lemon. Take the pan off the heat, squeeze the lemon over everything, and toss to coat.

Tips for getting it right
The main way this dish goes wrong is overcooked shrimp; they turn from juicy to rubbery in about ninety seconds. A few things keep you on the right side of that line.
- Start checking shrimp at 4 minutes, especially if they’re on the smaller side. A loose C shape is done; a tight O is overdone.
- Use a large skillet. A crowded pan steams instead of sears, and you lose the color.
- Taste an asparagus piece at the 4-minute mark. Crisp-tender, not floppy. Pull the pan early if you need to.
- Squeeze the lemon off the heat. Cooked lemon juice loses the fresh zing and can taste bitter.
- If using frozen shrimp, sit them in a bowl of cold water for 10 to 15 minutes while you prep the asparagus.
Variations
- Add a little heat. A pinch of red pepper flakes goes in with the garlic.
- Butter finish. Swap half the olive oil for butter for a richer sauce.
- Fresh herbs. Stir in chopped parsley or basil off the heat.
- Parmesan on top. A light grating right before serving adds salt and depth.

Skip them here. They’ll turn rubbery when reheated in the pan, and the dish loses its whole appeal. Raw, peeled, deveined is what you want.
Medium to large, roughly 16-30 per pound. They cook evenly in the 5-minute window. Jumbo shrimp need an extra minute; tiny ones overcook fast.
Thick spears need an extra 1 to 2 minutes. Thin ones might be done in 3. Taste a piece at 4 minutes and go from there.
Keep the pan at medium, not high, and only give the garlic 1 minute alone before the asparagus goes in. If it’s browning fast, drop the heat or add the asparagus early.
Fridge in an airtight container for up to 2 days. Reheat gently in a skillet with a splash of water or oil, 2 to 3 minutes over low-medium. Don’t freeze it, the asparagus goes mushy, and the shrimp toughen up.
