This Keto French Toast Casserole makes your kitchen smell like a cozy wee café. The bread bakes up soft in the middle with a golden, caramelized top that practically begs for a drizzle of sugar-free maple syrup. It’s warm, sweet, and just the right kind of indulgent without blowing your carb count, which is exactly how breakfast should be.

Healthy can still hit that comfort spot, and this casserole is proof. It’s packed with protein, low in carbs, and swaps out sugar for a smart sweetener that keeps things light. I like that it feels a bit special without undoing the rest of the week’s good choices – a win for anyone who loves a proper breakfast.
โค๏ธ Why you will love this recipe
- Low-carb: Made with keto bread and sugar-free sweetener.
- Protein-packed: Eggs, milk, and cream make it filling enough to last all morning.
- Easy prep: Just cube, pour, and bake – nothing fancy, tastes amazing.
- Perfect texture: Crispy on top, soft and custardy underneath.
- Make-ahead friendly: Assemble it the night before and bake fresh in the morning.
- Crowd-pleaser: Even non-keto eaters will ask for seconds.
๐๏ธ Key ingredients & substitutions

- Keto bread: The base of the casserole. Use your favorite low-carb loaf or almond flour bread, or go classic with regular bread if you’re not keeping it keto.
- Eggs and egg whites: These create the custard texture and add plenty of protein. You can use all whole eggs if you like it richer.
- Milk and heavy cream: Makes the casserole soft and creamy. Unsweetened almond milk or heavy whipping cream are both great options.
- Sweetener: A sugar substitute like xylitol, Swerve, or Lakanto gives sweetness without carbs.
- Pecans: Adds crunch and buttery flavor. Walnuts or sliced almonds work too.
- Orange zest: Brightens the flavor without adding sugar. Skip it if you want a more classic taste.
- Vanilla extract and cinnamon: The combo that makes it smell like breakfast heaven.
- Butter and sugar-free maple syrup: Melted together for a sweet, glossy topping that crisps up in the oven.
๐ฅฃ How to make keto french toast casserole
- Prep the dish: Preheat your oven to 375°F (190°C) and lightly grease an 8×8 or 11×7 inch baking dish.
- Cube the bread: Slice or tear your keto bread into 1-2 inch cubes. Don’t worry about making them perfect – rustic is the vibe.
- Layer it up: Add a layer of bread to the baking dish, scatter some pecans on top, then repeat until everything’s used up.
- Mix the custard: In a medium bowl, whisk the eggs, egg whites, milk, cream, sweetener, orange zest, vanilla, cinnamon, and salt until smooth.

- Pour it in: Evenly pour the egg mixture over the bread and nuts, making sure everything’s nicely soaked.

- Make the topping: In a small bowl, mix melted butter, sugar-free maple syrup, cinnamon, and salt.

- Drizzle and bake: Pour the buttery topping evenly over the casserole, then bake for 35-45 minutes until golden and set in the center.

- Cool and serve: Let it rest for about 10 minutes, then top with sugar-free maple syrup, a sprinkle of powdered sweetener, and maybe a few fresh berries if you’re feeling fancy.

- Flavor twist: Add a handful of blueberries, or add a dash of almond extract for a marzipan nudge.
- Serving idea: Pair it with crispy bacon or sausage to balance the sweetness.

- Chocolate swirl: Stir in a few sugar-free chocolate chips or drizzle melted keto chocolate on top after baking.
- Spice it up: Add a pinch of nutmeg or pumpkin pie spice for extra warmth.
- Cream cheese pockets: Tuck small dollops of cream cheese between the bread cubes for a rich surprise.

โ Frequently asked questions
Oh, totally. Just grab some unsweetened almond milk or coconut milk instead of the dairy stuff, and use a bit of coconut oil or vegan butter for the topping. It’ll still bake up creamy and golden.
Ah, that’s the bread talking! If it’s too fresh or soft, it soaks up too much custard. Next time, use day-old or lightly toasted bread – it holds its shape way better.
For sure. It just adds a little brightness, but if you’re not into that, leave it out. Or, go the other direction and toss in a splash of almond extract instead, it’s a nice marzipan-y twist.
Easy fix. Add another spoonful of your favorite sweetener, or just give it an extra drizzle of sugar-free maple syrup once it’s baked. No judgment here.
